We offer a three Edge Pro Apex sharpener kits, from the APEX KIT Standard, APEX KIT Plus, APEX KIT Complete.

We also offer an assortment of quality water stones for a coarse 120 grit to a fine 800 grit.

Polishing tapes of 3000 grit.

The 1200 grit ceramic sharpening hone comes in 8 inch & 10 inch hones.

Over the years I kept at it & every where I worked [ Kitchens, Machine Shops, Cabinet Shops ] I always did the sharpening .

Then, In 1980 a person who owned a fish market saw me sharpening at a friends restaurant. He was so impressed that he told me if I wanted to go into the sharpening business he would give me all the clients that I could handle. So, I decided to give it a try. I was immediately overwhelmed with customers.

Sharpening by hand I could not remove metal Accurately enough to create the speed I needed to make a living. I never considered a powered machine because all of my customers wanted hand sharpened edges. So, I needed a machine that would sharpen fast & accurately by hand & I knew none existed on the market.

I have always been innovative. So, I went to work on the machine that I needed. Ten years, 100 Prototypes later, and 100,000 knives and I had it. At this point, I had customers begging me to build them one. So, I sold my sharpening route and began building the Edge Pro * Professional Model in 1990. Making a smaller commercial model turned out to be very difficult. It wasn't until 1994 that the Apex Model was completed.

Over the years we have kept improving the machines adding all stainless steel parts, higher quality plastics, and stones that cut faster and last longer.

The feedback from my customers keeps me inspired. I have heard the stories so many times about how frustrated customers are with all the sharpeners they have tried that even when they order an Edge Pro they do not really believe it's going to work. Then, when it does we get the most amazing e mails & phone calls.
